Title: Vegetable Mixture^

Yield: 1 Servings

2 Zucchini, shredded
4 Carrots, shredded
1 Onion, finely chopped
2cFinely chopped broccoli
2cFinely chopped cauliflower
2 Plum tomatoes, chopped
1 Green bell pepper, chopped
4clGarlic, minced
1/2cChicken or vegetable stock
2tsDried leaf basil
1/2tsGarlic powder
1/2tsOnion powder
1tbLow sodium soy sauce

Combine all ingredients and saute in stock until soft. Add seasonings and soy sauce; cook 5-10 minutes over medium heat. Makes about 1 1/2 quarts cooked vegetables.

Note: This is very adaptable....use what you have on hand.
